To cap-off the second weekend of Wassail, we’ll honour our reds by “barreling down”. This is the process of taking newly fermented wine and transferring it into barrels for aging. Learn the art of proper fill volume – too little dishonours the wine; too much leads to wine-chaos.
To experience the gift of barrels, we’ll compare our new-fills to reds, which have been in barrel since last fall alongside the newly fermented reds before they go into barrel
