Our 2016 Lake on the Mountain Riesling is done with a wild fermentation, so residual sweetness creates a spontaneous re-fermentation in the bottle for a bit of a spritz. The result is a dry wine with honeysuckle, white lily and an intense citrus pear nose with elements of flint. A touch of upfront sweetness gives way to mouth-watering key lime, crab apples and melons. A backbone of steely minerality leads to a lingering finish.
This wine can hold its own when paired with rich, oily dishes or better yet, enjoyed by itself.
The fruit is from Lake on the Mountain, 100 metres above the Bay of Quinte where there is a very unique microclimate. It’s hotter up there and the berries are smaller for a more concentrated skin-to-must ratio, making for a luscious wine. This wine was also done as a wild fermentation, which makes the wine more complex.
