The grapes were picked in great condition following a very good growing season. Grapes were hand harvested, crushed and gently pressed. Fermentation initiated with a selected yeast, the fruit characters that we strive for in the vineyard.
The wine was fermented in french oak – 80% new, 20% 2yr old wood. Wine was aged for 10 months in oak following fermentation, lees stirring for the first 4 months. The wine was racked from barrel and settle in stainless steel tanks for 3 months before bottling. The wine has tropical fruit aromas and flavours and balanced so beautifully.
This chardonnay has a nose of ripe peach, passion fruit and pomegranate. It has an exotic spicy caramel richness with suttle notes of fragrant white flowers. A creamy texture with a fresh citrus finish, it is drinking beautifully now. With the potential to cellar, this wine provides a classic dinner pairing for every season. Drinks well now and will cellar short term – 3-5 years. Pair with fresh herbs like parsley, sage, tarragon, thyme, lemon pepper. Shallots, yellow squash, pea soup, zucchini, asparagus, artichokes and mushrooms are also great. Truffles, almond lemon feta, black kalamata olives, pretzels, kettle chips and soft fermented nut paté.
