A Bordeaux-style white blend of dry Sémillon, Sauvignon Blanc and Gewurztraminer, its crisp enough to be a patio wine, smooth enough to be a cocktail sipper and dry enough to be a dinner wine, so it’s very versatile. Most clients buy this by the half case or case to have on hand for last minute hostess gifts, dinner parties or birthday presents.
The wine has intense fruit aromas – lemon, apple and papaya dominate the nose with wild flower notes. The palate has similar characteristics with a wonderful texture that is balanced by nice acidity. This wine will be great as an aperitif but will also balance well with dinner. Drink over the next 3 years.
Herb-driven sauces, fresh fennel butternut squash soup, green curry, spring rolls with peanut sauce, honeydew melon salad, Vietnamese cuisine, spiced Arabic or Indian foods like saffron rice dishes.
Wine Making Notes
The 2016 vintage was one of the best in Ontario in recent memory – a long dry summer with many days over 30 Celcius gave us near-drought conditions to concentrate the flavours. This great weather carried on in to the fall giving a long ripening period before harvest.
This wine is a blend of Sauvignon Blanc, Semillon and Gewurztraminer. They were crushed, de-stemmed and pressed quickly to retain the fresh fruit character. These varietals were fermented and aged separately for 12 months before being blended together before bottling.
