2021 Chardonnay

This wine went through malolactic fermentation, an additional fermentation that happens after yeast converts sugar into alcohol. “Malo” is the process by which a bacteria in the wine changes all the tart-tasting malic acid, naturally present in grape must, and converts it to a softer-tasting lactic acid. Lactic acid is the same acid you find in milk. Malolactic Fermentation is why some Chardonnays have a “buttery” quality.

Winemaker’s Notes

This Chardonnay was unique in that we fermented and aged the wine in both old French oak barrels (60%) and stainless steel (40%). Both underwent full malolactic fermentation, and were aged sur lie (on lees) for 10 months. The wine was then blended together and allowed a month of time to marry before filtering and hand-bottling. The combination of oak and steel, as well as the relatively short ageing time created a different expression of Chardonnay that is very fresh and fruit-forward, yet also displaying smooth, nutty and creamy characteristics.

Tasting Notes

Pale gold in colour with emerald low-lights, this wine is about tree fruits and citrus, with minerality and finesse. It presents a nose of lemon curd and carmelized merengue, oriental pear, white peach, white pepper and subtle nutmeg which opens up as decanted. On the palate is star fruit, honeydew melon, vanilla créme fraiche and pie crust. It’s soft yet mouthwateringly lean, delicate and balanced with a saline finish.

Pairing Notes

Pair with fresh herbs like parsley, sage, tarragon, thyme, lemon pepper. Shallots, yellow squash, pea soup, zucchini, asparagus, artichokes and mushrooms are also great. Also pairs well with truffles, almond lemon feta, black kalamata olives, pretzels, kettle chips and soft fermented nut paté.
