Winemaker’s Notes
These late-budding and early-ripening varietals excel in our cooler climate and these three components create a balanced, versatile wine with 50% Sauvignon Blanc, 35% Pinot Gris, and 15% Gewürzrtraminer. Sauvignon Blanc brings great acid balance with its green notes, the Pinot Gris adds refreshing citrus flavour and zesty acidity and the Gewürztraminer brings a spicy edge with its sweet fruit and florals. This blend has great balance of richness and freshness – a beautiful sipping wine and a match for the dinner table.
Tasting Notes
A bewitching harmony of citrus, green apple, peach, tropical fruit like papaya, and aromatic floral elements give way to a creaminess on the palate with a refreshingly balanced finish. Enjoy thyme, gooseberry and flinty mineral notes in a medium – light body wine with a zesty finish.
Pairing Notes
Try nut-based cheese as well as heart of hemp Morbier or aqua fava Brie. Fresh vegetables, yellow squash, parsnip, white beans, roasted cauliflower, marinated kale and fruit elements of lemons, oranges, peaches or apricots. Harmonize with herb-driven or even vinegar based sauces, sweet fennel, asparagus and butternut squash soup. Risotto, pesto on pasta, taco verde, fried tofu, heart of palm and pasta salad are all great. Anything with a bit of oil or salt, so kettle chips are perfect.
